Can someone explain what this mode does?

It also sets the car to a sport suspension, which makes the suspension firmer and improves handling.

It can make the car go very fast or very slow.

If you don’t understand it, you shouldn’t be driving. But now you know.

When you use S mode and the car reaches eighty-eight miles per hour, you’ll see some serious action!

Nope…

On my base Camry, it just creates ‘software gears’ that you can shift through. I think it doesn’t show the actual number of gears.

That’s not correct. This only applies to the hybrid Camry. For the gasoline models with 2.5 and 3.5 engines, it’s just a gear limiter. It prevents the car from shifting beyond the chosen gear. For example, in ‘S2’ mode, the car will stay below 3rd gear and won’t shift up unless you hold it at high RPM for a few seconds.

Simulated dual-clutch.

It’s for shifting gears like a true sequential shifter, but it’s not. It’s a ‘simulated sequential’.
