Totally fair. Some people love tweaking things, others prefer to just follow manufacturer guidelines and not think about it.
So if I mainly tow and do highway driving, 5W-30 would be better?

Probably. It provides a thicker oil film at higher temps, which could help under load. But you’d have to decide if the trade-off (possible warranty concerns, slight MPG drop) is worth it.
