Just like the title says. I’m curious if anyone knows if it’s okay to remote start the car while it’s plugged in, whether it’s still charging or fully charged. Also wondering if this could affect the battery health in any way.

Yes, you can pre-heat or cool the cabin while it’s plugged in. I do this all the time when it’s super hot or cold out.

Do you know if I can do this with My Mitsubishi Connect? If so, how do you set it up?

Uh… why would someone in a Prius Prime forum know anything about Mitsubishi? You might need to check a Mitsubishi forum for that one.
Not sure what you mean by ‘start.’ The car usually stays in electric mode by default. If you’re asking about putting it in ‘ready’ mode, it won’t let you while plugged in, so you can’t accidentally drive off. But if you mean just starting the heat or AC, then yes, it should allow that.
