In my opinion, the Yaris doesn’t really need OEM parts. The car is so light and not really stressed, so third-party parts are fine. Honestly, it would be impressive if you could even break something on a Yaris.

Transmission fluid and coolant should be OEM
There’s nothing on your list that you couldn’t get as aftermarket. RocketAuto is great. Just try to stick with well-known brands.
If you’re doing these services, skip Toyota. They’re all basic services that any independent shop can do for much less
I think OEM for the ATF would be best. The rest can be aftermarket parts and some of them are easy to do yourself or you can take them to a different auto shop
